I prefer to store what I eat and keep a supply of foods that I will eat if times get tough. I have lived off my food storage when when I was unemployed for months at a time. In my business I work as a contract geologist in the "boom-bust" cyclic metals mining and petroleum sectors. So I have to plan ahead to survive.
Short and Intermediate Term Food Storage

I suggest buying items you actually eat in order to have a varied diet of foods you like in order to prevent diet fatigue. You will tire of eating the same thing over and over again. I know, my college diet was Ramen noodles that I would try to spice up and toss in a few veggies and scraps of meat for flavor.
Long Term Food Storage
Upper Shelves
Lower Shelves

And closets (note the two Big Berkey water filtration units in the boxes)
I loaded one set of shelves with cases of Mountain House freeze-dried and cases of spices, canned Red Feather butter and canned Red Feather cheese. I have a few buckets of grains and will pick up a few "Gamma Lids" later.
